Does alcoholic fermentation modify alkaloids and other complex chemicals?
If plant material containing alkaloids, sterols, or other relatively complex phytochemicals is fermented by the common yeasts involved in brewing, can these chemicals undergo structural modification? Are there any documented examples of this?
